Separate the eggs into yolks and whites. The yolk should be separated from the egg white as cleanly as possible so that the quindim doesn’t taste like eggs later. Therefore, for example, place the egg yolks on a sieve (not made of metal!) And let them drain. This takes some time but separates the yolks cleanly.
In the meantime, mix coconut, melted butter at room temperature, vanilla, and sugar with a whisk.
Now add the egg yolks and carefully stir in. Do not beat the mixture with the egg yolk, so that the quindim stays nice and silky and shiny.
Put the mixture in buttered molds and sprinkle with a little sugar. Put the molds in a larger form in the water bath and bake at 180 ° C for about 60 minutes (preheat the oven!). In the end, do the toothpick test: if nothing sticks to the toothpick, the quindim are ready. Caution: depending on the oven, this can be after 30, 45, 60, or 75 minutes, so try again and again.
Once the quindim has cooled down a little, it can be taken out of the mold.
